Pear Tart Recipe

If you've ever grown your own fruit, then you've experienced the blessing and curse of having an abundance of ripe fruit all at the same time. I first made this recipe a few years ago when the pear tree in my yard did exactly that, and it has since become my go-to for a simple and delicious dessert. The original recipe actually called for currants, so you can also experiment with different fruit combinations if you're feeling adventuresome.  
1 pie shell
3 ripe pears, peeled and diced
3 kiwi, peeled and sliced
1 cup blueberries
3 eggs
2/3 cup heavy cream
1/3 cup maple syrup
1 tbs vanilla
4 tbs flour 

Spread the pears evenly in the pie shell and then add the blueberries and sliced kiwi on top. Mix the eggs, heavy cream, maple syrup, vanilla and flour in a bowl and then spread the mixture over the fruit. There is usually extra so don't feel like you have to use it all. Then Bake at 350 for 35 minutes. Let the tart cool and then enjoy!
